三色蛋

下次做的時候要記得記錄蒸的時間。可以配沙拉醬食用。

Ingredients:

  • 雞蛋 eggs 4
  • 皮蛋 thousand-year eggs 2
  • 鹹鴨蛋 salted duck eggs 2
  • 米酒 少許 a bit of rice wine (optional)

Methods:

  • 在一容器上舖上烤盤紙
  • 皮蛋放入滾水中煮個幾分鐘,使蛋黃凝固
  • 皮蛋與鹹蛋去殼切小塊
  • 將雞蛋的蛋白蛋黃分開,蛋白打散(把蛋白裡一團團的打散)
  • 將皮蛋與鹹蛋放入容器,舖平,倒入蛋白,靜置一回等氣泡消失
  • 放入電鍋蒸,鍋蓋要留一些空隙
  • 等蛋白稍微蒸熟後再倒入蛋黃,再蒸到熟。
