花生山藥湯 Peanut nagaimo soup

I was going to make peanut lotus root soup over the weekend. However I couldn’t find any decent quality lotus root in Asian supermarket this weekend. I thought I’ll just use some random root vegetable to replace it. So here comes the nagaimo soup. The result was pretty good, but I still miss the lotus root soup…

Ingredient:

  • 2 cups peanuts (with skin on)
  • 2 lbs nagaimo, peeled and chopped in big chunks
  • 5 slices fresh ginger
  • 6 cups water
  • salt

Methods:

  • Put everything in a big pot. Bring it to boil.
  • Reduce heat and simmer for 1.5 hours. Add salt to taste.
