I was going to make peanut lotus root soup over the weekend. However I couldn’t find any decent quality lotus root in Asian supermarket this weekend. I thought I’ll just use some random root vegetable to replace it. So here comes the nagaimo soup. The result was pretty good, but I still miss the lotus root soup…
- 2 cups peanuts (with skin on)
- 2 lbs nagaimo, peeled and chopped in big chunks
- 5 slices fresh ginger
- 6 cups water
- Put everything in a big pot. Bring it to boil.
- Reduce heat and simmer for 1.5 hours. Add salt to taste.
