涼拌土豆絲

Ingredients:

  • 馬鈴薯
  • 高梁醋(白醋也可)
  • 蔥末
  • 辣椒末
  • 香油

Methods:

  • 煮滾一鍋水。
  • 馬鈴薯削皮切細絲(小於2mm寬),用冷水沖洗二次洗去澱粉。如果沒有要馬上煮要泡在水裡。
  • 馬鈴薯絲燙熟撈起(燙到水滾就可以了,不需要燙太久,不然會失去土豆絲應該有的脆口感)。
  • 將瀝乾水份的馬鈴薯絲與蔥末、辣椒末、鹽、醋、糖拌勻 (蔥味很重要,醋要多,糖一點點就好),最後拌入香油。
