涼拌茄子 Chinese Eggplant

九層塔版本

香菜版本

Ingredients:

  • 茄子
  • 調味料:醬油、蒜末、辣椒末、香油、九層塔、香菜 (醬的搭配可隨意)

Methods:

  • 茄子切段後縱剖為一半。
  • 水煮滾,將外皮往下放入鍋中煮3~5分鐘。(要切半的原因是這樣比較不容易翻面,外皮可以長時間浸泡在水中而不接觸空氣,以保持顏色好看)
  • 煮軟後撈起,淋上調好的醬。
