青龍椒炒皮蛋 (青龍皮皮剉)

Ingredients:

  • 青龍椒 (糯米椒)
  • 皮蛋
  • 蒜末
  • 辣椒,切圈圈
  • 麵粉少許
  • 醬油膏
  • 香菜末/蔥末 (optional)
  • 老干媽 (optional)

Method:

  • 皮蛋蒸熟剝殼,切成四半。糯米椒斜切片。
  • 起熱油鍋,皮蛋裹粉,入油鍋半煎半炸至粉變成黃色,起鍋。
  • 小火爆香蒜末,然後下辣椒末。放入糯米椒中大火煸炒。煸炒至略乾時下皮蛋,以醬油膏及老干媽調味。起鍋前下香菜。
