Gratin Dauphinois 法式奶油烤馬鈴薯

Ingredients:

  • Potatoes (Russet, Yukon…) 馬鈴薯 澱粉含量高的品種較好, Costco賣的美國馬鈴薯最適用。
  • heavy cream 液態鮮奶油,不含糖的,安佳的用過太濃,President牌的不錯
  • salt 鹽
  • pepper 黑胡椒
  • shredded Mozzarella cheese (optional),焗烤用cheese絲

Methods:

  • Use a mandoline, cut the potatoes into very thin slices. 馬鈴薯切成1mm厚的薄片 (可用切片器)
  • Mix the potato slices with salt and pepper. 馬鈴薯以鹽、胡椒調味,可以吃吃看試味道。
  • Layer the potato slices in a baking dish. 把馬鈴薯一層層平舖在烤盤中。
  • Pour heavy cream into the dish until the potatoes are covered. 倒入鮮奶油將馬鈴薯蓋過。
  • Preheat the oven to 320 F (160 C), bake for about 40~60 minutes. The heavy cream will boil, bake until there is no bubble coming out. The temperature and baking time vary depending on the size of your baking dish. 烤箱預熱160度,將馬鈴薯放入。鮮奶油會起泡 (內含的水沸騰了),烤到沒有泡泡為止。如果一次烤很大盤,大概要烤將近1小時。
  • Put the shredded cheese on top, broil for 5 more minutes. 舖上cheese, 用小烤箱烤5分鐘,沒有小烤箱的話把烤箱上火調高,烤盤盡量貼近上火。
