媽媽版魚香茄子

這是我媽發明的簡單版本。魚香是指以蒜薑製成的醬料,這道菜裡又有蒜又有薑,就勉強稱它為魚香茄子吧。

Ingredients:

  • 茄子,剖四半,切段。
  • 蒜末
  • 薑末
  • 猴頭菇末 (optional)
  • 凍豆腐 (optional)
  • 醬油膏

Method:

  • 起油鍋,炒香薑末、猴頭菇末、蒜末,要按順序放。
  • 把炒香料推到旁邊,捏碎凍豆腐放入炒黃。
  • 放入茄子略炒,放入水、醬油膏蓋上鍋蓋悶至熟。
