香煎茄盒

Ingredients:

  • 黃豆渣
  • 蔴油
  • 醬油
  • 五香粉
  • 蔥末
  • 薑末
  • 茄子 (日本圓茄較好,台灣茄子也可以)
  • 麵粉
  • 蒜末 (optional)

Method:

  • 除茄子、麵粉、大蒜外其餘材料拌勻,即為內餡。
  • 茄子切蝴蝶刀,一刀不斷,一刀斷。二片茄子底端相連。
  • 麵粉、鹽、水調成麵衣。
  • 將內餡夾入茄子片中間,裹上麵衣入油鍋以中小火煎至熟。
