芋粿巧

Ingredients:

  • 芋頭, 切丁 (去皮後實重約500g)
  • 糯米粉, 500g
  • 乾香菇
  • 油蔥酥
  • 醬油膏
  • 白胡椒粉

Methods:

  • 爆香香菇、油蔥。加入芋頭丁翻炒,加入醬油膏、胡椒粉、鹽調味。
  • 邊炒邊加水,直到水再也吃不進去,這時芋頭約已七分熟。
  • 加水至蓋過材料,煮滾熄火,馬上倒入糯米粉拌炒,直至看不見粉氣。如太乾可再加熱水。
  • 差不多成糰後,分割成小塊(我作28個),手抹油,每塊在手上稍揉後捏成彎月形
  • 水滾後入鍋,中火蒸13~15分,看有膨脹起來即可。
